This nearly hands-off protein-rich banana bread is pure perfection, and it comes together in just over an hour.

So, get your ingredients prepped and tossed into a bread pan. Then get a quick run or swim in while it bakes and come home to a kitchen wafting with the purely amazing aromas of fresh baked banana bread. 

Protein Banana Bread Ingredients:

  • 1 ½ teaspoons unsalted butter
  • 1/3 cup melted coconut oil, room temperature
  • ½ cup organic maple syrup, room temperature
  • 2 very ripe bananas, mashed
  • 2 eggs, room temperature, and whisked
  • ¼ cup plain almond milk
  • 3 tablespoons unsweetened apple sauce
  • ½ teaspoon almond extract
  • 1 ¾ cup all-purpose, unbleached flour
  • ¼ cup EXO Pure Cricket Powder
  • 1 teaspoon baking soda
  • ½ teaspoon kosher salt

Protein Banana Bread Instructions:

  1. Preheat oven to 325 degrees.
  2. Grease a 9x5 bread pan with butter. Reserve.
  3. In a large bowl, combine the coconut oil, maple syrup, mashed bananas, eggs, almond milk, apple sauce, and almond extract.
  4. Add the flour, EXO Pure Cricket Powder, baking soda, and salt. Stir well to combine.
  5. Pour the batter into the prepared bread pan and bake for 30 minutes. Check the bread, and if it’s browning too quickly, cover with foil.
  6. Bake for an additional 30 minutes, or until a toothpick inserted into the center comes out clean.
  7. Place bread pan on a metal cooling rack for 20 minutes. Run an offset spatula around the bread, and invert onto the cooling rack.
  8. Let bread cool completely.

Chocolate Pistachio Drizzle Ingredients:

  • 1 tablespoon confectioners’ sugar
  • 2 teaspoons plain almond milk
  • 1 ½ tablespoons dark chocolate chips
  • 1 ½ tablespoons roughly chopped pistachios
Chocolate Pistachio Drizzle Instructions:
  1. In a small bowl whisk together the sugar and milk. When smooth, reserve the mixture.
  2. Place the chocolate chips in a small microwaveable bowl. Microwave on high for 10 seconds. Stir well.
  3. Heat for an additional 10 seconds and stir well, until smooth. (If the chocolate chips aren’t completely softened, microwave for an additional 5-10 seconds.)
  4. Pour melted chocolate into the sugar/milk mixture. Stir well to combine.
  5. Drizzle over the bread, and top with pistachios.
